Pilchard Tomato Stew

Rich, comforting, and packed with goodness! This flavourful tomato stew combines roasted veggies, cherry tomatoes, and aromatic bay leaves with the bold taste of Glenryck Tomato Pilchards for the perfect one-pot meal.

Ingredients

  • 2 Cups Maize Meal
  • 1 L Boiling Water
  • 1 Tbsp Butter
  • 1 Tin Creamed Sweetcorn
  • 125g Spinach, Finely Chopped
  • 100g Cheddar Cheese, Grated
  • 1 Tin Glenryck Six Gun Pilchards
  • To Serve: Chakalaka

Method

1. In a mid-sized pot sauté onions in olive oil until translucent, add bay leaves, tinned tomatoes and roasting vegetables.
2. Mix the brown onion soup powder into the water, add this mixture into the pot, and bring it to the boil.
3. Reduce the heat and simmer for 15 minutes or until the sauce has thickened and vegetables are cooked through.
4. Stir in 1 tin Glenryck Tomato Pilchards.
5. Serve with rice.
